Versatility of Icewine

Serving
Serve 1.5 to 2 ounces of Icewine per glass, chilled to approximately 43°F or 6°C. A standard 375ml bottle will serve approximately 7-8 people. Once opened, you can store Icewine for up to four weeks if properly sealed and refrigerated. Icewine is best served in the Riedel Vinum Extreme Icewine glass. Inniskillin's founders played an instrumental role in the creation of the world's first ever custom crafted Icewine stemware. Developed by Donald Ziraldo, Georg Riedel and Dr. Karl Kaiser, the Vinum Extreme Icewine glass was created in 2000 to display the full range of flavour, texture and aromatic qualities of Icewine. Kaiser's pleasure with sipping his Icewine from the Riedel Icewine glass was clear with his comment, "This is always how I dreamt my Icewine should taste!"
Aging and Care
Icewines can be enjoyed in their youth or aged for many years. Icewine in its youth will display classic fresh fruit characteristics and are crisp and clean. As they age, the wines tend to have a greater degree of complexity and depth, and begin to offer up a wider range of intense aromatics. During the aging process, the naturally concentrated acidity helps to maintain the structure and balance of the vintage. Icewine will also darken to a rich deep yellow/honey color as they age and if they are handled and stored correctly, they will also increase in value. Icewine unopened and stored on it side in a consistent and cool place (55-65 °F or 12-18 °C ) and away from vibrations can keep for many years.
