Icewine Varieties








The production of premium Icewine is ideally suited to the climatic conditions of Canada's Niagara Peninsula in the Province of Ontario; warm summers to ripen the grapes and cold winters to provide the essential natural freezing.

There are three main Icewine varietals made at Inniskillin Niagara, each with their own unique flavour and aromatic profile.



Vidal

This aromatic and hardy French Hybrid is ideal for making Icewine. Not only is it a long and steady ripened, it has rich, full tropical aromas and flavours balanced by a firm acidity. Inniskillin produces Vidal Icewine in three distinct styles:

•  Vidal (non-oaked)
•  Oak Aged Vidal
•  Sparkling Vidal

Riesling

One of the world's greatest "noble" varieties, this cool weather grape with high acidy is a natural for the making of Icewine. Classic Riesling qualities include elegant citrus flavours, ripe orchard fruit tones and a slight mineral edge. Inniskillin produces Riesling in two distinct styles:

•  Riesling (non-oaked)
•  Oak Aged Riesling

Cabernet Franc

The brick and red hue of this grape variety produces a unique and brilliant red-coloured Icewine. There's an abundance of candied red berry aromas on the nose and the savory essence of fresh strawberries and cream on the palate. Inniskillin produces one style:
