There are three main Icewine varietals made at Inniskillin Niagara, each with their own unique flavour and aromatic profile.

Vidal This aromatic and hardy French Hybrid is ideal for making Icewine. Not only is it a long and steady ripened, it has rich, full tropical aromas and flavours balanced by a firm acidity. Riesling One of the world's greatest "noble" varieties, this cool weather grape with high acidy is a natural for the making of Icewine. Classic Riesling qualities include elegant citrus flavours, ripe orchard fruit tones and a slight mineral edge. Cabernet Franc The brick and red hue of this grape variety produces a unique and brilliant red-coloured Icewine.
