There are three main Icewine varietals made at Inniskillin, each with their own unique flavour and aromatic profile.

Vidal This aromatic and hardy French Hybrid is ideal for making Icewine. Not only is it a long and steady ripener, it has rich, full tropical aromas and flavours balanced by a firm acidity. view wines

Riesling One of the world's greatest "noble" varieties, this cool weather grape with high acidy is a natural for the making of Icewine. Classic Riesling qualities include elegant citrus flavours, ripe orchard fruit tones and a slight mineral edge. view wines

Tempranillo The Tempranillo grape is used in a high proportion of Spain’s most respected wines (Rioja). It is early ripening and thick skinned and requires a cool climate to achieve elegance and good acidity making it a good candidate for Icewine.
