Icewine Varieties







Inniskillin crafts premium Icewines in Canada's two primary wine regions, Ontario's Niagara Peninsula and the Okanagan Valley in British Columbia . Though geographically far apart, both regions have the essential climatic conditions for Icewine production: warm summers to ripen the grapes and cold winters to provide the essential natural freezing.

There are three main Icewine varietals made at Inniskillin, each with their own unique flavour and aromatic profile.



Vidal

This aromatic and hardy French hybrid is ideal for making Icewine. Not only is it a long and steady ripener, it has rich, full aromas and flavours balanced by a firm acidity. Inniskillin produces Vidal Icewine in three distinct styles. Our Vidal Icewine (non-oaked) boasts of luscious tropical fruit flavours, ranging from mango to lychee to apricot. When Oak Aged Vidal , these flavours are enhanced by creamy vanilla and caramel notes. Our Sparkling Icewine has delicious aromas of apricot, pear, nectarine, citrus and ginger, smoothly polished in a dazzling and delicately effervescent finish. Lively!


Riesling

One of the world's great "noble" varieties, this cool weather grape with high acidity is a natural for the making of Icewine. Classic Riesling qualities are elegant citrus flavours such as fresh lime and grapefruit, as well as ripe orchard fruit tones of apricot and peach. It is also characterized by a slight mineral edge.


Cabernet Franc

The brick red hue of this grape variety produces a unique and brilliant red-coloured Icewine. There's an abundance of candied red berry aromas on the nose and the savoury essence of fresh strawberries and cream on the palate.
